1 Box Entenmann's Little Bites Brownies
3/4 cup Whole Milk Ricotta Cheese
3 tablespoons Cream Cheese, softened
9 tablespoons Powdered Sugar
1/4 teaspoon Vanilla Extract
1/4 teaspoon Lemon Juice
1/3 Cup plus 2 tablespoons Miniature Semisweet Chocolate Chips
Place ricotta cheese and cream cheese in a food processor and process for 1 minute. Scrape sides of bowl, add powdered sugar and process for one minute. Stir in vanilla, lemon juice and 1/4 cup of the miniature chocolate chips.
Unwrap brownie bites. Using a sharp knife, carve a hole of about 1 inch in center of each bite. Using a very well-rounded teaspoon, spoon ricotta mixture into each hole and spread across top of each bite.
Place filled cannoli bites in a pan and chill for at least 1 hour to set filling. Sprinkle tops with remaining 2 tablespoons of miniature chips before serving.
